Crushed olives are a cornerstone of the Calabrian culinary tradition. Land green olives are rigorously crushed by hand and planted for a few days in water and salt to sweeten them. Finally they are simply seasoned with chilli pepper, garlic, oregano and preserved in extra virgin olive oil.
